Recently there were requests for both Black Bean as well as Hot and Sour
Soup recipes. Here are two vegan versions. They are very yummy and of
course can be modified to include more or less veggies in each.

Black Bean Soup--
1 lb. dried black beans
6 cups vegetable stock
3 cloves garlic, crushed and chopped
3-4 chili peppers
1 cup onion, chopped
1 cup bell pepper, chopped
1 sweet potato, julienned
2 tb. safflower oil
1/2 tsp. oregano
1/2 tsp black pepper
1 clove garlic, crushed and chopped
1. Soak beans overnight. Discard water [or use to water houseplants].
2. In soup pot, bring stock to boil and add beans, 3 cloves garlic and
chili peppers. Boil for 1-1/4 hours.
3. In pan put oil, onion, bell pepper, and potato. Sautee 2 minutes. Add
to beans.
4. Add remaining ingredients and boil 1 hour.
This can be served either as a soup or as a stew on tortillas.
